Berry coulis

Berry coulis are one of my favourite recipes when it comes to cake toppings. They slightly more acidic flavour from the berries and lemon add that touch of freshness to sweeter desserts.

Ingredients

  • 250g of mixed berries - of course if you wish you can pick only one berry such as just strawberries or raspberries but I love using a mixture. But pick your favourite, t will turn out delicious in any case. 

  • 90g of sugar

  • 60ml of water

  • the juice of 1/2 a lemon

Preparation

  1. Blend the berries - if you prefer to have a smoother sauce, sift the blended berries to eliminate possible seeds 

  2. pour the blended berries in a little saucepan with the rest of the ingredients

  3. cook on low heat for 5-6 minutes -

  4. do not let it reach boiling point
  5.  - until the sauce will be reduced 

  6. let it cool before using it
