Egg pasta

I know there's ready made dried egg pasta you can easily find, but how about the satisfaction of making it from scratch and preparing it just like I used to at home? It will obviously take longer but you'll definitely be rewarded with the flavour, the pasta will literally melt in your mouth.
Ingredients
- 400g all purpose flour
- 2 eggs
- 1tbsp of olive oil
- 1/2 a glass of water - only if needed, it depends on the consistency of the dough
Preparation
- in a bowl knead all the ingredients together until you get a smooth dough - should it feel too dry, add a spoonful of water at a time and keep kneading
- wrap it in film and let it rest for 30 minutes
- divide the dough in smaller batches and start rolling it out with the help of the pasta making machine until it reaches the width level 2 or 1
- cut the rolled pasta in the shape you prefer - for lasagne, maltagliati, etc...
- fill a pot with water and a spoonful of salt and bring to boil
- boil the pasta for about 30 seconds
- run the cooked pasta under cold water
- use as needed
