Egg pasta

I know there's ready made dried egg pasta you can easily find, but how about the satisfaction of making it from scratch and preparing it just like I used to at home? It will obviously take longer but you'll definitely be rewarded with the flavour, the pasta will literally melt in your mouth. 

Ingredients

  • 400g all purpose flour
  • 2 eggs
  • 1tbsp of olive oil
  • 1/2 a glass of water - only if needed, it depends on the consistency of the dough 

Preparation

  1. in a bowl knead all the ingredients together until you get a smooth dough - should it feel too dry, add a spoonful of water at a time and keep kneading 
  2. wrap it in film and let it rest for 30 minutes 
  3. divide the dough in smaller batches and start rolling it out with the help of the pasta making machine until it reaches the width level 2 or 1 
  4. cut the rolled pasta in the shape you prefer - for lasagne, maltagliati, etc...
  5. fill a pot with water and a spoonful of salt and bring to boil
  6. boil the pasta for about 30 seconds
  7. run the cooked pasta under cold water
  8. use as needed
